Nacho Average Queso Dip

Cheese can often be a tricky food. It's something many of my clients crave but does not always leave their bodies feeling well--not to mention unpasteurized cheese is a pregnancy no-no! I am typically not a fan of vegan cheese alternatives--which are often made of soy, rice, fillers and other highly processed ingredients. However, Let Thy Food is different! Their products are nutrient-dense, and made with real, whole ingredients! I recently discovered them at my local health food store and they have quickly become a household staple!

I always tell my clients that it is better to allow yourself a healthy indulgence than deny yourself of the craving. So give my nacho recipe a try the next time you are looking for that cheesy fix!

Ingredients:

  • 1 bag of sweet potato tortilla chips
  • 2 avocados (diced)
  • 1 cup of tomatoes (diced)
  • 1 bell pepper (diced)
  • 1 cup sweet onion (diced)
  • 1 cup black beans 
  • 1 lime
  • 1 container of Let Thy Foods Hatch Valley Queso 

Directions

Mix the veggies and avocado in a bowl. Add the juice of one lime and a pinch of salt and set aside.

Pour chips into a bowl and top with diced pepper, tomato, avocado, onion mixture and black beans. Serve with queso on the side or drizzled on top.
