Zoodle Pad Thai (Vegan)

Try my vegan zoodle pad thai for a quick, healthy lunch or dinner! This recipe is also completely SOY FREE so it is fertility friendly. Soy (even organic), especially in processed forms like soy sauce, soy milk, etc is difficult for our body to digest, creating inflammation in the gut that we want to avoid when we are trying to get pregnant. Luckily there is a great alternative for soy sauce called coconut aminos that gives you a similar flavor without the soy!

Ingredients

-1 large zucchini, spiralized 

-1 red pepper, sliced into thin strips 

-1/2 cup grated carrots 

-1/2 cup snap peas 

-1/4 cup green onion 

- 2 cloves of garlic

Sauce  Ingredients

-1/4 cup water

-1 tablespoon Almond Butter

-2 tablespoon Coconut aminos 

-1 teaspoon Honey or Maple Syrup 

-1 teaspoon Lime Juice

-1 teaspoon Sriracha (or chili sauce of your choice)


Directions 

  1. Combine the water, almond butter, coconut aminos, lime juice, and sriracha in a bowl. Stir to combine.

  2. Heat a skillet over medium heat. Add the snap peas, garlic, red pepper and carrots and cook until soft. Add the sauce mixture and continue cooking over medium heat.

  3. Add the zucchini noodles to the sauce and veggies and cook over medium heat until the noodles are tender, about 3-5 minutes.

  4. Pour into two bowls and sprinkle with chopping spring onion and crushed almonds.
